Overnight Blueberry French Toast Casserole

  • 1 loaf brioche bread
  • 2 cups blueberries
  • 6 large eggs
  • 2 cups milk
  • 1/2 cup sugar
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon cinnamon

Instructions

  1. In a large bowl, whisk together eggs, milk, sugar, vanilla extract, and cinnamon.
  2. Cut the brioche into cubes and gently fold in the blueberries.
  3. Pour the egg mixture over the brioche and blueberries, making sure all pieces are soaked.
  4. Cover and refrigerate overnight.
  5. Preheat the oven to 350°F (175°C).
  6. Bake for 45-50 minutes until golden brown and set in the middle.
