Peach Chiffon Pie

  • 2 cups sliced fresh peaches
  • 1 cup sugar
  • 1/4 cup lemon juice
  • 1 tablespoon unflavored gelatin
  • 1/4 cup cold water
  • 1 cup heavy cream
  • 1 pre-baked pie crust

Instructions

  1. In a saucepan, combine sliced peaches, sugar, and lemon juice. Cook over medium heat until the peaches are soft.
  2. In a separate bowl, dissolve gelatin in cold water. Add to the peach mixture and stir until fully combined.
  3. Let the mixture cool to room temperature.
  4. In another bowl, whip the heavy cream until soft peaks form.
  5. Fold the whipped cream into the cooled peach mixture until well combined.
  6. Pour the mixture into the prepared pie crust and refrigerate until set, about 4 hours.

Notes

  • For best taste, use ripe peaches.
  • You can substitute fresh peaches with canned peaches if necessary.
