  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 2 large eggs

  • 8 ounces cream cheese, softened

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, mix together the pumpkin puree, sugars, eggs, and vegetable oil until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fill each muffin cup halfway with the batter, then add a dollop of cream cheese in the center before topping with more batter.
  6. Bake for 18-20 minutes, or until a toothpick comes out clean.
  7. Let them cool in the pan for a few minutes before transferring to a wire rack.
