  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, mix together the pumpkin puree, eggs, and sugars until well combined.
  3. In a separate bowl, whisk together the flour, baking soda, baking powder, spices, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Scoop the batter into the prepared muffin tin and fill each cup about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow to cool before serving.

Notes

  • For a sweeter muffin, increase the sugar by 1/4 cup.
