  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda

  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine pumpkin puree, granulated sugar, brown sugar, and vegetable oil. Mix well.
  3. Add eggs one at a time, mixing until fully incorporated.
  4. In another bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in nuts if using.
  6. Divide the batter evenly among the muffin cups.
  7. For the streusel topping, mix together remaining brown sugar, flour, and butter until crumbly. Sprinkle over the muffins.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Allow to cool before serving.
