Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 can (14 oz) diced tomatoes
  • 2 cups vegetable broth
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 cups kale, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, carrots, and celery. Sauté for about 5 minutes, until soft.
  3. Stir in the garlic, thyme, and oregano. Cook for another minute until fragrant.
  4. Add the diced tomatoes, vegetable broth, and chickpeas. Bring to a simmer.
  5. Add the kale and cook for an additional 5 minutes, or until the kale is wilted.
  6. Season with salt and black pepper to taste.
