2 tablespoons olive oil
1 onion, chopped
2 carrots, sliced
2 celery stalks, chopped
3 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried oregano
1 can (14 oz) diced tomatoes
2 cups vegetable broth
1 can (15 oz) chickpeas, drained and rinsed
2 cups kale, chopped
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
In a large pot, heat the olive oil over medium heat.
Add the onion, carrots, and celery. Sauté for about 5 minutes, until soft.
Stir in the garlic, thyme, and oregano. Cook for another minute until fragrant.
Add the diced tomatoes, vegetable broth, and chickpeas. Bring to a simmer.
Add the kale and cook for an additional 5 minutes, or until the kale is wilted.
Season with salt and black pepper to taste.
Serve hot and enjoy!
