  • 2 cups ladyfinger cookies
  • 2 tablespoons cocoa powder

Instructions

  1. In a mixing bowl, combine mascarpone cheese, heavy cream, sugar, and vanilla extract. Whip until soft peaks form.
  2. Dip ladyfinger cookies briefly in cooled coffee.
  3. Layer dipped ladyfingers in a serving dish.
  4. Spread half of the mascarpone mixture over the ladyfingers.
  5. Add a layer of fresh raspberries on top.
  6. Repeat the layering process.
  7. Dust the top with cocoa powder before serving.
  8. Chill for at least 4 hours before serving.
