Slow Cooker Beef Manhattan

A delectable slow cooker recipe perfect for a cozy dinner.

Ingredients

  • 2 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 bay leaves
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 5 carrots, chopped
  • 4 stalks celery, chopped

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Sear the beef roast on all sides until browned.
  2. Transfer the roast to a slow cooker. Add onion, garlic, beef broth, Worcestershire sauce, bay leaves, salt, and pepper.
  3. Top with carrots and celery.
  4. Cover and cook on low for 8 hours, or until the meat is tender.
  5. Remove the roast, let it rest for a few minutes, then slice and serve with the vegetables and broth.

  • For a richer flavor, add a splash of red wine to the broth.
