Slow Cooker Greek Chicken

A simple and delicious recipe for slow cooker Greek chicken that the whole family will love.

Ingredients

  • 2 pounds chicken thighs
  • 1 cup cherry tomatoes
  • 1/2 cup Kalamata olives
  • 1 tablespoon olive oil
  • 2 teaspoons dried oregano
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 lemon, juiced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Place the chicken thighs at the bottom of the slow cooker.
  2. Add the cherry tomatoes, Kalamata olives, olive oil, oregano, garlic, chicken broth, lemon juice, salt, and pepper on top of the chicken.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender.
  4. Shred the chicken with a fork and mix with the sauce before serving.

Notes

  • Serve with rice or quinoa for a complete meal.
  • Add feta cheese on top for extra flavor.
