- 2 pounds chicken thighs
- 1 cup cherry tomatoes
- 1/2 cup Kalamata olives
- 1 tablespoon olive oil
- 2 teaspoons dried oregano
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 lemon, juiced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Place the chicken thighs at the bottom of the slow cooker.
- Add the cherry tomatoes, Kalamata olives, olive oil, oregano, garlic, chicken broth, lemon juice, salt, and pepper on top of the chicken.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender.
- Shred the chicken with a fork and mix with the sauce before serving.
