Spicy Salmon Sushi Bake

Ingredients

  • 2 cups sushi rice
  • 4 cups water
  • 1 pound salmon fillet
  • ¼ cup mayonnaise
  • 2 tablespoons sriracha
  • 2 tablespoons soy sauce
  • 1 sheet nori, cut into pieces
  • ¼ cup green onions, chopped
  • 1 tablespoon sesame oil
  • ¼ cup furikake seasoning

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Rinse the sushi rice under cold water until the water runs clear, then add it to a pot with water and let it soak for 30 minutes.
  3. Bring the pot to a boil, then reduce to low heat and simmer covered for 18 minutes.
  4. While the rice is cooking, prepare the salmon by mixing the mayonnaise, sriracha, and soy sauce in a bowl.
  5. Flake the cooked salmon and combine it with the mayonnaise mixture.
  6. Once the rice is cooked, spread it evenly in a baking dish.
  7. Layer the salmon mixture over the rice and drizzle with sesame oil.
  8. Top with nori pieces and sprinkle furikake seasoning.
  9. Bake in the preheated oven for 20 minutes.
  10. Once out of the oven, garnish with chopped green onions before serving.

Notes

  • You can adjust the spiciness by adding more or less sriracha.
  • This dish is great for meal prep and can be enjoyed warm or cold.
