Celebrate St. Patrick’s Day with these delicious chocolate mint cookies that are easy to make and totally irresistible.

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup mint chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and sugar until smooth.
  3. Beat in the eggs, one at a time, then stir in the vanilla.
  4. In another bowl, combine the flour, cocoa powder, baking soda, and salt.
  5. Gradually stir the dry ingredients into the wet ingredients until well blended.
  6. Fold in the mint chocolate chips.
  7. Drop by rounded tablespoons onto ungreased baking sheets.
  8. Bake for 10 to 12 minutes, or until set.
  9. Let cool on baking sheets for a few minutes before transferring to wire racks to cool completely.

Notes

  • For a festive touch, add green sprinkles on top before baking.
  • These cookies can be stored in an airtight container for up to a week.
