  • 1 cup apple cider
  • 2 tablespoons apple cider vinegar

  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups shredded cabbage
  • 1 cup grated carrots
  • 1 apple, julienned
  • 1/4 cup mayonnaise
  • 1 tablespoon lemon juice

Instructions

  1. In a bowl, mix apple cider, vinegar, brown sugar, Dijon mustard, garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Marinate the chicken thighs in the mixture for at least 30 minutes.
  3. Preheat the oven to 375°F (190°C).
  4. Place the marinated chicken in a baking dish and pour the remaining marinade over the top.
  5. Bake for 30-35 minutes, until the chicken is cooked through.
  6. In another bowl, combine cabbage, carrots, apple, mayonnaise, and lemon juice to make the slaw.
  7. Serve the chicken hot with the crisp autumn slaw on the side.

Notes

  • For extra flavor, let the chicken marinate overnight.
  • Feel free to add nuts to the slaw for added crunch.
