Strawberry Earthquake Cake

A deliciously indulgent dessert with layers of strawberry flavor and a surprise cheesecake center.

  • 1 box chocolate cake mix
  • 1 cup water
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 2 cups strawberries, sliced
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup shredded coconut

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the cake mix, water, oil, and eggs until well combined.
  3. Pour half of the batter into a greased baking dish.
  4. In another bowl, beat the cream cheese, powdered sugar, and vanilla until smooth.
  5. Spoon the cream cheese mixture over the batter in the baking dish.
  6. Add the sliced strawberries on top of the cream cheese mixture.
  7. Pour the remaining batter over the top.
  8. Sprinkle shredded coconut on top.
  9. Bake for 40-45 minutes or until a toothpick comes out clean.
  10. Let cool before serving.

Notes

  • For an extra touch, add chocolate chips to the batter.
  • Serve with whipped cream for added sweetness.
