  • 2 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 4 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 bay leaf
  • Salt to taste
  • Black pepper to taste
  • 1 cup red wine (optional)

Instructions

  1. Heat olive oil in a skillet over medium heat. Brown the beef chuck roast on all sides.
  2. Transfer the browned beef to a slow cooker.
  3. Add chopped onion, carrots, celery, and garlic into the slow cooker.
  4. Stir in crushed tomatoes, tomato paste, oregano, basil, bay leaf, salt, and pepper.
  5. If using, pour in red wine. Cover and cook on low for 6-8 hours or until beef is tender.
  6. Remove bay leaf and shred the beef before serving.
