- 6 egg yolks
- 3/4 cup granulated sugar
- 2 cups mascarpone cheese
- 1 1/2 cups heavy cream
- 1 cup strong brewed coffee, cooled
- 1/2 cup coffee liqueur (optional)
- 24 ladyfinger cookies
- 2 tablespoons cocoa powder, for dusting
- In a large bowl, whisk the egg yolks and sugar together until pale and thick.
- Fold in the mascarpone cheese until smooth.
- In another bowl, whip the heavy cream until stiff peaks form, then gently fold it into the mascarpone mixture.
- Combine the brewed coffee and coffee liqueur in a shallow dish. Dip each ladyfinger into the mixture briefly, then layer them in a baking dish.
- Spread half of the mascarpone mixture over the ladyfingers, then repeat with another layer of dipped ladyfingers and the remaining mascarpone.
- Cover and refrigerate for at least 4 hours, preferably overnight.
- Before serving, dust with cocoa powder.
Notes
- For a non-alcoholic version, skip the coffee liqueur.
- Try adding a sprinkle of grated chocolate on top for extra flavor.
