- 2 cups ripe peaches, peeled and diced
- 1 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract (optional)
- 1 package fruit pectin
- In a large pot, combine the diced peaches, sugar, and lemon juice. Stir well and let sit for 30 minutes.
- After 30 minutes, add the vanilla and almond extract if using. Heat the mixture over medium heat until it starts to boil.
- Stir in the fruit pectin, and bring the mixture back to a rapid boil for 1-2 minutes.
- Remove from heat and carefully ladle the jam into sterilized jars, leaving about 1/4 inch of headspace.
- Seal the jars with lids and process in a boiling water bath for 10 minutes to ensure they are preserved.
