  • 2 cups ripe peaches, peeled and diced
  • 1 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract (optional)
  • 1 package fruit pectin

Instructions

  1. In a large pot, combine the diced peaches, sugar, and lemon juice. Stir well and let sit for 30 minutes.
  2. After 30 minutes, add the vanilla and almond extract if using. Heat the mixture over medium heat until it starts to boil.
  3. Stir in the fruit pectin, and bring the mixture back to a rapid boil for 1-2 minutes.
  4. Remove from heat and carefully ladle the jam into sterilized jars, leaving about 1/4 inch of headspace.
  5. Seal the jars with lids and process in a boiling water bath for 10 minutes to ensure they are preserved.
