  • 1 onion chopped
  • 3 cloves garlic minced
  • 2 cans white beans drained and rinsed
  • 1 can diced green chilies
  • 4 cups chicken broth
  • 2 teaspoons cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup corn frozen or canned
  • 1 cup sour cream
  • 1/2 cup cilantro chopped

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and cook until translucent.
  2. Add minced garlic and cook for an additional minute.
  3. Stir in chicken breasts, green chilies, and spices. Cook for about 5 minutes.
  4. Add chicken broth and bring to a boil. Reduce heat and simmer for 20 minutes.
  5. Remove chicken, shred it, and return to the pot.
  6. Add white beans, corn, and sour cream. Stir until combined and heated through.
